Long ago, near the village of Hedley, there lived a strange and playful trickster(騙子), known as the Hedley Kow.  Sometimes it looked like an ordinary object.  Sometimes it looked like a donkey or a goat.

One evening, as an old woman went along the path, she saw an old iron pot lying in the ditch. “Fancy that,” she said.  “Nobody seems to want this old pot. I will take it home and plant pretty flowers in it.”

When she tried to lift it, she saw that it was full of gold pieces. “Well, now, if that doesn’t beat all,” she said. “I’m rich! I can buy a fine house and fancy clothes.”

The pot was heavy, so she tied her shawl around it and began to drag it home.  After a while, she stopped to rest. When she looked in the pot, she was amazed to see that it was full of silver pieces!

“Oh, my god!” she said.  “Aren’t I the lucky one ! If it were gold, thieves would have been after me.  My friends might have been jealous.  But I can hide these silver pieces, take out a few at a time, and live like a queen.”

On she went, pulling the pot after her. She was nearing home now. At her gate, she looked into the pot. What a surprise! The silver had changed into a lump(塊) of iron. “Iron,” she said.  “Well, now! No one will be jealous or want to steal this from me.  I can use this iron to prop my door open and let in fresh air and sunlight. Lucky  me!”

As soon as she said that, the pot began to grow and later it became a goat. Then it jumped up and ran off down the road laughing.

“Fancy that!” said the old woman.  “I believe I have seen the Hedley Kow! Not many folks can say that, and that’s a fact. I’ll just sit up by my fire tonight thinking about how lucky I was to see it for myself. I truly must be the luckiest person in the world!”

I will never forget the year I was about twelve years old. My mother told us that we would not be _21_ Christmas gifts because there was not enough money. Now I know that we black people are much more likely to have high blood pressure and diabetes(糖尿病) than white people. And they often lead to heart attacks and other untreated diseases. New research has found out the surprisingly high levels of salt in many of black people’s favorite meals. It is easy to see that if you avoid processed(加工過的) foods and use salt in your cooking within the limit, you won’t exceed the daily level.
The research showed how much salt there is in some foods that we buy from restaurants and takeaways. An average salad with rice and peas has 6.2 grams of salt. This is more salt than you are supposed to eat for the whole day.
A researcher talked about the importance of home cooking rather than take-outs. At home, he pointed out, not only can you hold control of the salt shaker, but also you can create tasty food which is low on salt. The researcher later provided curry goat and rice and peas. They were low on salt, but completely delicious.
I do not suppose Jamaicans are going to stop buying takeaways soon. But if you suffer from high blood pressure, it is probably better not to buy them often.

The National Gallery of Art in Washington, D.C., is one of the world's greatest art museums. Millions of people have entered its doors to see paintings by the world's fine artists. But if these priceless masterpieces are to be preserved, the Gallery must protect them carefully. In the National Gallery, however, humidity and temperature are carefully controlled. The building is air-conditioned in summer and heated in winter. The air-conditioning and heating system are so important to the life of the painting that the Gallery has two of each system. If one should fail, the extra one can take over.

Light is another enemy of paintings. Ultraviolet rays (紫外線) in light cause paintings to fade (褪色).  Long ago, paintings often hung in dark churches and palaces. A coat of varnish (清漆) was a protection from the weak light. But when museums took over the care of many paintings, they were often hung in brighter light than before. Soon they were in danger of fading. The damaging effects of light were increased when the museums removed the varnish coating, yellowed with age.

To protect its paintings, the National Gallery put a special kind of glass in its skylights. This glass allows visible lights to enter the building but it keeps out harmful ultraviolet rays. The Gallery has also developed new and better varnishes which help to keep paintings from fading. Thanks to these new precautions, many of the world's greatest paintings are being well protected for future generations to enjoy.
